Casa Julián ― 1951
Casa JuliánはWorld’s 101 Best Steak Restaurants 2025 世界第7位、Guía Repsol 2024「2 Soles」を獲得しています。
「Casa Julián

Casa Julián of Spain Joins KITAN IN for The Rare Tour Osaka 2026Three-Night Collaboration in Osaka, October 28–30
Two approaches to beef: Japanese Wagyu ageing and traditional Basque charcoal grilling.
OSAKA, JAPAN — From October 28 to 30, 2026, Osaka restaurant KITAN IN will collaborate with Casa Julián, the established steakhouse from Tolosa in Spain’s Basque Country, for The Rare Tour Osaka 2026.
Taking place at KITAN HIBIKI in Osaka’s Hozenji district, the event will feature a six-course menu developed by both restaurants, accompanied by a selected wine pairing. Two seatings will be held each evening, with a maximum of 20 guests per seating. The collaboration brings together two approaches to preparing beef: KITAN IN’s work with aged Japanese Wagyu and Casa Julián’s traditional charcoal grilling of mature European cattle.
KITAN IN — Exploring the Character of Aged Japanese Wagyu
Located in Osaka’s historic Hozenji Yokocho, KITAN IN is a ten-seat counter restaurant led by owner-chef Hiroyuki Takeshita. The restaurant specializes in aged Japanese Wagyu, with an emphasis on understanding the characteristics of individual cattle, cuts, and ageing conditions. Chef Hiro works closely with producers and carefully selects beef based on its origin, bloodline, quality, and suitability for ageing. His approach focuses on developing the meat’s flavour, aroma, and texture while maintaining its natural characteristics.
The restaurant’s name, “IN” (韻), refers to the qualities of beef that can be appreciated after tasting, including its aroma and the way its flavour develops on the palate.
KITAN IN occupies a renovated property formerly used as a traditional Japanese restaurant, with a history dating back approximately 120 years. Its counter-style dining format allows guests to observe the preparation and finishing of dishes, with particular attention given to service, presentation, and seasonal ingredients.
Casa Julián — Traditional Basque Grilling Since 1951
Casa Julián was founded in 1951 by Julián Rivas in Tolosa, a town in Spain’s Basque Country known for its tradition of grilled beef. The restaurant was later taken over by Matías Gorrotxategi, who developed the grilling methods that remain central to Casa Julián today. His son, Xabier “Xabi” Gorrotxategi, continues the family tradition.
Casa Julián is particularly known for its Txuleta, a thick-cut steak prepared over charcoal.
The restaurant selects mature European cattle, generally between six and nine years old, and seasons the beef with Mediterranean sea salt before cooking it on a specially designed charcoal grill.
Its cooking method places particular importance on the quality and condition of the beef, heat control, and precise grilling techniques. The menu and preparation methods have remained closely associated with the restaurant’s original approach.
Casa Julián was ranked No. 7 in the World’s 101 Best Steak Restaurants 2025 and was awarded Two Soles in the Guía Repsol 2024, one of Spain’s established restaurant guides.
Two Restaurants, Two Approaches to Beef
The collaboration is built around the differences between Japanese Wagyu and mature European beef, and the techniques used by each restaurant. At KITAN IN, ageing is used to develop the characteristics of Japanese Wagyu, with an emphasis on flavour, aroma, and texture.
At Casa Julián, charcoal grilling is central to the preparation of mature European cattle, using controlled heat and minimal seasoning to bring out the qualities of the beef. Rather than combining these methods into a single cooking style, the six-course menu will present the individual approaches of both restaurants within one dining format.
Comment from Chef Hiro of KITAN
“Casa Julián has maintained its approach to preparing beef for more than 70 years, with a strong focus on the relationship between the quality of the meat and the way it is cooked.
At KITAN IN, we work primarily with aged Japanese Wagyu, paying close attention to how ageing affects its flavour, aroma, and texture.
Although we work with different types of beef and use different techniques, I believe both restaurants share an interest in understanding the meat and preparing it in a way that best reflects its characteristics.
In 2025, we had the opportunity to participate in The Rare Tour in Hong Kong and introduce our approach to Japanese Wagyu to an international audience.
We are pleased to welcome the Casa Julián team to Osaka this year and look forward to presenting a menu that reflects the individual styles of both restaurants.”
